Mexican Style Eggs Benedict with Yolk Folk Poached Eggs

This Yolk Folk twist on Eggs Benedict is SO good! Building the tower took a bit of concentration (yes, I’d admit it has a lean in the photo…) but the rest was pretty straightforward. If the thought of making your own Hollandaise sauce gives you the wobbles, then you can always use bought sauce and add the chilli paste when you heat it up.
